back to medieval times.

this reason Vin Santo has always, and will continue to be considered the wine of
friendship.
Il Vero Vin Santo

Vin Santo
del Chianti DOC Riserva, is created through a long and slow process that begins
with the grape harvest ( chosen among the vine species of Trebbiano, San
Colombano, Malvasia) and the natural dehydration of the grapes on " Castelli di
Canicci" ( structures made of reeds) by the Vinsantaia
LA VINSANTAIA

The
must from the dried grapes is left to ferment for three years in the "
Caratelli" ( small chestnut or durmast barrels) after which the contents are
collected and left to settle, for about a year.

Finally, the wine is
bottled and left to age for a year, in such a way as to let all its fragrances
and tastes intensity, before beginning to sell the true Vin Santo del Chianti
DOC Riserva. ( thus five years passed since the grape harvest).
