The history of Vin Santo begins in the “Vinsantaia”, the attic of the Marini family, where selected Trebbiano Toscano and Malvasia del Chianti grapes, picked by hand, are left drying on straw mats for four months, from September to December.

Only when they reach the right level of dryness, we softly press them and put their juice into the “caratelli”, small, chestnut and durmast barrels. Our “Vinsantaia” is the perfect room, because during the day it is hot while during the night it is cooler: we leave the windows open, so the long and spontaneous fermentation process is constantly starting and stopping following the weather. During the four years of fermentation, an indigenous yeast that has been passed on for generations, known as “madre” gives the wine its uniqueness. The wines ages on lees all the time and draws this nice, slow oxidation flavor, because the oxygen is able to penetrate so quickly. We assemble the wine of all the barrels and bottle it, where it will age one further year.

As our Vin Santo del Chianti DOC, the Vin Santo del Chianti “Occhio di Pernice” DOC is a jewel born in our Vinsantaia, where selected, hand-harvested Sangiovese grapes are left drying on straw mats for four months, from September to December.

During the four years of fermentation, the “madre”, an indigenous yeast that has been passed on for generations, gives the wine its uniqueness. We assemble the wine of all the barrels and bottle it, where it will age one further year.

Let the intense and mysterious bouquet with aromas of chestnut honey, coffee, dried plums, malaga, and propolis entice you. Every sip will surprise you with sweet and spicy notes, dried apricots, toasted hazelnut, tobacco.
